Not the best photos, for sure, but I finally got to see in person an Anatomy in Motion demo by Susan Harris (something I had read about many times). Susan is a multi-discipline riding instructor, coach and author of multiple equine related books on riding, gaits, conformation and movement. She offers an extensive clinic schedule but her most popular demonstration is Anatomy in Motion: The Visible Horse, featuring a white horse that has been hand painted (by Susan) with skeletal anatomy on one side and major musculature on the other. The horse is longed in the center of the ring while Susan discusses how structure effects movement, and how activity can impact structure - like heavy load-bearing, or the pressures of a particular sport, like jumping. A very simple but very effective method of teaching (plus, an accurately painted horse looks pretty darn cool). Breyer produced a neat model of the Anatomy in Motion horse in 2005, it's now retired from production, but you can still find it for purchase at some retailers.
